Cake Tasting Event

Hello,

I am new to the forum and I have learned an abundance of information on this site.

I will have my first cake tasting event next month and I am a little nervous.  It looks as though hundreds of tickets will be sold.  This is great news, however it is intimidating when I have never baked that many cakes at one time.

Does anyone have any suggestions as to how to prepare the cakes? Should I start now and freeze them?  If so, how do you freeze cakes?

Also how do you handle the logistics to make the tasting run smooth?

Andrea,

Congratulations on your cake tasting event!  To answer your question about frozen cake, I have never used frozen cakes but have heard great things.  I suggest you make three of your best cakes and offer those instead of trying to make a whole bunch since this is your first tasting.  Offer people samples not an entire serving.  Also make sure you get their name, address, phone number, and email in return from them getting a sample.  This way, you can build a list of customers and mail out information about your specials and/or promotions.

I have tried freezing cakes and haven't had much success with them. I wish you all the luck with your cake tasting event.

I would think sheet cakes would be easier. However another suggestion is mini cupcakes. That would equal a taste and I think would save you a lot of time. Cupcakes are very popular right now.

Thanks for your suggestions.  I like your idea about the cupcakes!!! I would have never thought about that.  Cupcakes would be perfect!!!

Hi Andrea,
I'm new to this site, but I have done many bridal shows years ago, I found the best way to go is using the tall tier stand using the cupcakes was the best for me.   Instead of using a regular size cupcake paper, I used the real small one like the size of a nut tossie, remember it is only a taste test so don't knock yourself out for days.  You can bake pretty many in no time. just keep replacing them as they are eaten.  
Oh, I always attached a plastic garbage bag to the outside of the table or near a corner for the paper wrappings, helps w/ the garbage & not to much of a mess.  I always had napkins too.

Need some suggestions I'm in Orlando Fl.  I want to step out on faith and start my cake business, I would like to do a cake tasting first, would I charge or just do the real little cupcakes as sample.  I do have a few pictures, but haven't learn how to put them on the computer yet, will real soon hopefully.  But this has been eating at me and I have learned so much from the mega 8 CD I need to get things in order first .

Every December I sponsor an All You Can Eat Chocolate Buffet.  I make at least 25 cakes to donate. (My Heavenly Lampshade cakes are 5 layers high)   In my regular kitchen, I could never make all those cakes at once.  I work full time as a teacher, so my time is limited as well.  I do freeze my cakes.  After baking and cooling, I double wrap them in saran and them put them in a garbage bag and stack them in my freezer.  They have always come out great.  I think the trick is to make sure that you wrap them well.  I basically have three wraps on them.  I have frozen them for up to a month before the event.
